Hulled sesame seeds are lighter in color than natural sesame seeds because the outside coating has been removed. Often found on top of rolls, they are ideal for baking and cooking. They are often used in Chinese cooking, desserts, casserole toppings, etc. When toasted, their flavor intensifies, and they are extremely flavorful sprinkled on salads or to garnish soup. They are also the main ingredients in tahini (sesame seed paste) and the wonderful Middle Eastern sweet call halvah.
