1 1/3 cup honey 2 egg whites, stiffly beaten ½ lb. Marcona Almonds, blanched, peeled, and kept warm ¾ cup roasted hazelnuts, kept warm Edible rice paper Directions:
First, put the honey into a heavy saucepan and place over medium heat. Stir with a wooden spoon until honey begins to boil. Then, remove from heat and continue to stir until honey becomes the consistency of a syrup. Stir in the egg whites and return mixture to heat. Continue cooking until it reaches a toffee-like consistency. Stir in nuts and mix well. Next, spread out the candy mixture into a pan lined with edible rice paper.
